Easy Shrimp Stir Fry

I LOVE SHRIMP. Who doesn't? Juicy little morsels that go with almost everything in the world? Unless you are Jewish or have an allergy to shellfish, you must love shrimp too, right??


I remember going to Red Lobster as a child for Shrimpfest, I couldn't get enough! I would eat shrimp any which way, baked, fried, popcorn, garlic butter, in a stir fry, with rice, noodles...I think you get the point. I was so in love with shrimp I could eat it all the time. That is until I found out they were FARMED! I have to admit, I learned this fact about shrimp far into my adulthood, when I returned to school and it blew my mind! 🤯 I never thought about where they came from except the ocean, right? WRONG!


I can't talk about shrimp without talking about the impact that farms are creating in the world. About one quarter of the shrimp produced in the world are farmed. This may not sound like a lot, but shrimp farms are making huge impacts on local marine communities that impact us all. Here are just a few facts:

  • Over 50% of farmed shrimp come from deforested Mangroves located in Southeast Asia and Central America. Mangroves are environmental warriors that trap and store carbon emissions while protecting marine communities.

  • Farmed fish contain a great deal of antibiotics as the shrimp are farmed in close communities where disease and bacteria can grow easily. The shrimp have been tested to show the overwhelming amounts of antibiotics that remain after processing.


So where can you find good shrimp?

Ensure that you are purchasing certified aquaculture branded shrimp with some of these labels:



This way you know your shrimp are safe!


Onto the the recipe!!!

Marinade:

  • 1 tbsp soy sauce

  • 1 tbsp ginger

  • 1 tsp fish sauce

  • 1 garlic clove, minced

  • 500 gm shrimp

  • 2 carrots, chopped

  • 2 stalks of celery, chopped

  • 1 red pepper, chopped

  • 2 cups mushroom, sliced

  • 300 g snap peas

  • 2 tbsp water


Sauce:

  • 2 tbsp soy sauce

  • 1 tbsp grated ginger

  • 1 clove garlic, minced

  • 1 tsp honey

  • 1 tsp sesame oil

  1. Marinade shrimp for 20 minutes

  2. Prepare all the vegetables

  3. Heat sautée pan over high-medium heat

  4. Place in shrimp and cook, remove from pan once cooked

  5. Add in carrots, red pepper, celery and mushrooms

  6. Pour over sauce and sautee

  7. Serve and enjoy!

If you chose, you may serve along side a bed of rice or noodles, but it is great just on its own.
